Pad kra pao gai Spicy Thai Basil Chicken

During covid, I couldn’t resist studying and learning about so many authentic recipes of my favorite cuisines. Spicy Thai Basil chicken is one of the favorites. The flavors of red chili peppers combined with fish sauce and Thai basil is the best. Such a beautiful combination once complete and I can eat this dish multiple times a week. Sweet and Spicy is a match made in heaven . Serve with a side of rice and enjoy. Take your time blending the garlic and chili peppers. You definitely want to elevate the flavors of these two ingredients.

Ingredients:

  • 2 chicken breast or chicken thighs chopped or 1 pound of ground chicken

  • 4 cloves of garlic

  • 3 shallots

  • 3 tsp of sugar

  • 4 Thai chilies

  • 4 tbs oil

  • 1 tsp oyster sauce

  • 2 tbs soy sauce

  • 1 tbs fish sauce

  • 1/3 cup chicken broth

  • 1 bunch Thai Basil leaves

In a wok over high heat, add the oil, chilies, shallots and garlic and cook for two minutes constantly stirring.

Add the chicken. Be sure it’s in small pieces.

Add sugar, soy sauce and fish sauce. Fry for 1 minute and then add the broth. Remember when using your wok on high heat, it should cook quickly..

Add the basil and stir- fry until wilted.

Serve with rice and enjoy.
