Gochujang Gnocchi w/Chicken
Pasta just makes everything better. I remember making this pasta on a stormy day and it was perfect.
Weather is usually an inspiration for certain recipes. Imagine rain hitting your window pane, soft music playing , a little thunder and a glass of red wine or bottle, whatever your preference. Perfect environment to create the most savory, flavorful dishes. This is definitely one.
Ingredients:
Bottle of red wine ( for later)
your choice of music to set the scene
Food ingredients:
Gnocchi Pasta (To save time)
Gochujang 1-2 tsp
Heavy whipping cream 1/2 cup - 1 cup
1/2 cup grated parmesan (to be added in and garnish)
Chinese Shaoxing 2-3 Tbs
Spinach 2 cups chopped
Fish sauce 1 tbs
Garlic cloves 2 minced
2-3 tbs olive oil
boneless chicken breast
1/2 cup vegetable stock (you may need less)
Cayenne pepper
black pepper
Season Chicken with Cayenne pepper and black pepper and set aside.
In a non-stick skillet, add olive oil and add chicken breast to skillet and saute’ on med heat until thoroughly cooked. Remove, and slice chicken into small pieces, cover and set aside.
In a separate pot- cook Gnocchi pasta per instructions on the package.
In a large pan on medium heat, add garlic, cooking wine, fish sauce and gochujang and mix until combined.
Then add heavy whipping cream, and vegetable stock. Allow to simmer for 5 minutes.
Add Chicken and spinach and allow to simmer for another 4-5 minutes. Add in Parmesan cheese, stir and remove from heat.
Garnish with more parmesan cheese and red pepper flakes (optional)
