Sticky Rice bowl w/Chicken part 1..

I love playing with flavors. Especially when you want something simple straight from the gym or you’re short on time.

I prefer bowls packed with protein, rice, something green with a sauce to bring it all together.

Ingredients you’ll need: For the Chx

  • Boneless Chx Breast 1-2

  • Black pepper (1 tsp)

  • Garlic Powder 1 tsp

  • Onion powder 1 tsp

  • Cayenne Pepper 1 tsp

    For the bowl ingredients:

  • 1 cup of Jasmine Rice

  • 1 cup of Brocclii Florets

  • 1-2 sweet potatoes (chopped and cubed)

    • Olive oil

    • Brown sugar

  • Sauce

    • Kewpie mayo

    • Sriracha

For the rice: Utilize a rice cooker for the perfect sticky rice. Be sure to wash your rice several times to remove the starch.

Sweet potatoes: Heat oven to 400 degrees

Wash and peel your sweet potatoes. Begin slicing from the round end, and then cut into small cubes.

On a baking sheet lined with parchment paper, add sweet potatoes, drizzle a light layer of olive oil , and a sprinkle of brown sugar.

Place in oven and roast for 20-25 minutes

Broccoli florets:

You can use the same baking sheet as the sweet potatoes. Just simply place the broccoli and the SP side by side.

Break the head of the broccoli into even-sized florets, place them on the pan, drizzle with olive oil, salt and pepper.

Bake for 15-22 minutes until they are brown and crisp around the edges.

The main Ingredient: The Chicken

Clean chicken and pat dry.

Season chx with a drizzle of olive oil, and dry seasonings. You can pre slice chicken into small bite size pieces before seasoning.

For cooking: Air Fryer: Spray your tray with non stick pray and add pieces of chicken. Cook for 15-20 minutes.

Plating: In your desired bowl, add the rice then top with roasted broccoli and sweet potatoes. Then add Chicken. I like to add a spicy chili oil to the chx or you can just top with spicy mayo.

Mayo consists of Kewpie Mayo and Sriracha.
